So I am going to try a new cider recipe...based on a mulled cider theme. Does anyone know if adding several cinnamon sticks, orange peels, cloves and nutmegs to the initial ferment would interfere with the yeast/brewing process? Thanks in advance for any thoughts.

The additions would need to be sterilised before addition and would suggest waiting until the initial vigorous ferment is over before adding. Otherwise, sounds good!

Ok, so I decided to give this idea a go. I made 20L of this so I hope it works. I brought 3L of water to a gentle boil and added 6 large cinnamon sticks, a dozen or so cloves, 3 whole nutmegs, 3 tablespoons all spice berries, orange peels from 4 large oranges, 1/2 kilo brown sugar, and 200 ml of blackstrap molasses. ( I thought I had regular molasses...but blackstrap was all I found) I let this gently boil for 1/2 an hour. At that point I added 4 teabags, turned the heat off and let that steep for another 20 mins. This was then strained and the liquid put in the FV, and enough pure apple juice added to bring me just over the 20L mark. I then put the cinnamon sticks back in as it seemed a bit shy on cinnamon flavour. The temp was fine, so I added the yeast (I used a Nottingham Ale yeast) and let it go for a week. The Krausen dropped last night, and the SG is good so I will bottle this today. It smells like apple pie!! I hope this tastes 1/2 as good as it smells. In a couple weeks I will try one and give an update...fingers crossed.
