Looking to do a dessert wine similar to the pic.
Any ideas? Is it just go extra sugar and flavour and then stop early?

Any help greatly appreciated

The nicest sweet red wine I ever made had frozen fruits of the following:-

Black forest fruits
Blueberries
Dark sweet cherries

Then I added vanilla essence and chocolate essence at bottling.

Get yourself a red wine yeast with a lowish alcohol tolerance and keep feeding it sugar until it can't take any more.
