Hello,

I'm going to attempt an extract brew soon and will be doing it in a 20l pot, so not full volume. The recipe says boil 10L for 90 mins, but do I keep the boil topped up so it is always at 10L or just let it boil down? Also, I presume I could scale up to say, 14L if the pot will take it and just add the correct ratio of DME at the beginning?

Pah! So many questions...

I let it reduce, I'd think topping up would impede your rolling boil. I'm no expert though.

Regarding volume an increase in boil volume will increase hop utilisation (a quick play with some brew software just now gives 42 IBUs for 10 litres and 57 for 14 litres for a brew I'm starting tonight, a big difference), so make sure you adjust for that if you are increasing volume.

Thanks - just realised I posted this in completely the wrong place - moving it now!
