How can i reduce hop bite?

Hi all,

I like to make a light hoppy beer, hoppier the better for me. As you would expect I get hop bite in my beers, but the amount seems the vary from beer to beer.

Is this due to the hops I'm using and the timings of dry hopping?
I tend to use higher alpha acid hops to reduce grass notes and to help prevent any diacetyl production.
Any help on hop bite would be amazing as I can't really find the answer online

How are you defining "hop bite?" Also, what part of hoppy are you going for? To me, a hop bite is the sharp bitterness of some IPAs that really hit you. Or do you mean an overpowering hop flavour?
 
I'm thinking similar to @phettebs - it would be helpful @Peteyb if you can post a recipe you've made and describe more what it is you're aiming for, e.g.

I'm sure it's not meant but this reads like a bit of a contradiction in terms 😁

Are you thinking more like AIPA, NEIPA, something else...???

Piney/resiney, fruity, floral?

Also some new world hoppy hops seem to be rather robust (especially Galaxy) whereas others (Cascade) are rather more mild by comparison.

(I say all this like I've got it sussed - 70+ AG brews and I'm still trying to figure it out! 😂)
