Hi everyone, just been picking Elderberries and have enough for 4 gallons. I’m after a bit of advice how much yeast compound (bought a tub from Wilko), yeast nutrient and pectalase you would suggest I should use. Many thanks.

Off to a good start, my foraged elders are still somewhat green.
I would stick with the manufacturer 's instructions for nutrient and pectolase - 1 teaspoon per gallon dissolved in warm water. Yeast 5g / 1 teaspoon will ferment out 5 gallon.
Good luck. Tried mine from last season, still a bit tannic yet. Nice flavour, tannin just gives it a dry edge. Leave to age a bit longer.

Thanks for that. I was surprised when we picked these how the elder trees varied some were ripe others were a long way off. I was looking at a recipe on here and it didn’t use campden tablets do you think them necessary?
