Okeydokes, thanks! I am brewing as we speak :) So... if I only want to use half of the danstar nottingham, how do I store the other half?

Seal it back up as best you can and put an elastic band round it, then put it in the fridge. I put my yeast in a Tate and Lyle golden syrup tin in the fridge.

I've used yeast weeks (if not months) after opening having kept it in the fridge like this.

Alternatively storing the 'other half' requires a chest freezer.
 
Thanks! I actually ended up using the whole sachet as it said on it 0.5-1gr/l and I brewed about 11L. It did look like a lot though once I rehydrated it! Bet the fermentation is gonna be done quickly, but also I've got a high vol alc lager so I guess the more yeast the better
