Greetings,

Once the fermentation has stopped, I want to put the beer in a barrel before bottling.

Do I need to pressurise the keg while I leave the Belgium Dubbel to "condition" for 6 months before bottling??

It is a plastic barrel.

How long should I leave the homebrew after fermentation ends, to get an idea of the Belgian Dubbel flavour??

Unless you're wanting to sour the beer and get wood flavours, then don't worry with a barrel.

Just put it straight in bottles to bottle condition.

I leave mine for a couple of months before I dig into them, but in honesty you can start drinking it after a couple of weeks, maybe 10 days. The last of the batch normally lasts for about 15 months
