Stabilised. How long under airlock?

Hi folks,

I have a wine that was racked and stabilised (along with two stage finings) one week ago. It is in a demi john filled to the neck two inches from the brim.

How long can I leave it in this state before I bottle it?

As long as you want. A WOW is probably best drunk within a year, but a red should be fine for at least a year if not 2 or more depending on the wine.

I'm going to bottle it in a couple of weeks, I was just worried about the two inches of head-space.

There's probably a bit of residual CO2 and likely a bit of SO2 from the stabilising in there, so oxidation is only a minor risk, but I do always top mine up.
But i wouldn't tale the lock out and top up after it'd been sitting for a while with no live yeast, unless I added more sulphite.
If it's clear, I'd bottle it.
