morning all

i was wondering what would be more accurate for measuring temps when ( trying to ) steep when mashing a thermometer or infared heat gun

i just ask as a thermometer will be approx but will show the temp inside of the body of liquid and a infared heat gun will show the surface temp ??

I find infared guns rubbish at best. I work in catering and took my infared and electric thermometer in to work the other day to test along side works more expensive models.
The results the two electric thermometers were .2 out from each other in liquid and the infareds were just all over the shop reading different temps every time you used them.
Also they cant measure boiling water for some reason(bubbling foam?). the boiling water was coming out at 80 odd on both of them.
I could be using them wrong but don't see how.
