Hi all, I have a question only kind-of related to TC but didn't know where else to post. I'm really enjoying making Festival Oaked Apple cider kits at the moment, but I'm wondering if anybody has experience of using Lalvin EC-1118 yeast instead of the yeast that's included in the kit. What differences in the fermentation and taste might I expect, if any? Thanks in advance.
 
EC-1118 is my "go-to" yeast, It will ferment just about anything to absolute bone dryness.
I have fermented apple juice with it to very high strength,But the result has allways tasted like super strong dry white wine.
Not at all like cider.
Give it a try and see if you like the result.
