I've started drinking my xmas stock and my ris-ky business which is 20 months old is now quite plummy. I've found 0-6 months sweet with around month 4 my favorite, then it goes through a licorice phase then dry then plummy.
I won't have any left to keep longer but to those who've done big dark beers 8%+ and kept their beer for longer what comes after plums? :hmm:
