Managed to find another relay which is closer to our original but now with an additional NC terminal. It is only rated at 20a on the NO and 10a on the NC.
Not sure which one is better.

Bit of a minefield with temperatures as keeping the mash at different temperatures will give you different outcomes. It is usually best to try and keep at one temperature than a range though, unless you are doing a step infusion, so try to insulate your mash tun as best you can and...

Yes we do recirculate through an external chiller but have a very fine filter fitted under our hop filter and we think that as this gets fuller the pump starts to draw air in from anywhere it can. We are going to remove this and put a finer filter into the mash tun instead.

Managed to find the air leak so the creamy head shouldn't happen again.
