Couple of days into my cider fermentation and it's going well. Neglected to correct the acidity at the start (about 3.6 pH) is it worth correcting with precipitated chalk at the end or do you think it will be fine. Appreciate this may be a bout personal taste but last year it was 4.0...

Is there any reason I shouldn’t rack off just into another large volume container rather than buying demijohns? Just seems for space and ease would be easiest to rack...
