    Hey all. Got designs on infusing a gin with Pink Peppercorns, Lemon Zest, Bay Leaves and Cardamom. Anyone got any ideas on what amounts I should be using? Never infused a gin before. Probably gonna be infusing about 500ml.

    More looking at sours and citrussy lagers. I've used Pilsner malt for both before with decent results. Alas there's no pilsner malt in the sale (hence asking on here) and I've never used Vienna which is in stock.

    Final update on this. Very very nice beer. A bit watery still but there's blackberry flavour and nice tartness to it and a lovely colour. I'd be very happy to pay decent pennies for this at a craft bar. Might try adding a small amount of lactose sugar for some body next time I do a sour, but...

    I didn't take any readings. Honestly I always forget to do gravity readings and I don't have a PH meter. Taste wise it wasn't overbearingly sour, but it definitely had a tartness to it.
