Discovered my first ever batch of spoiled wine at the weekend, my Elderbbery from last September.
Notice some odd spots and marks on the inside of the glass, emptied one out and the bottle had loads of slimey growths covering the bottom and half way up the sides.
26 Bottles down the drain...
Just picked up a youngs merlot 5 gallon kit for £12 in the sale at wilkos.
Do you think it would be OK to make it with additional fruit (ie. Elderberries) to make a fuller bodied/slightly stronger wine?
I dont really want to waste the kit or the elderberries.

You can certainly taste the raspberry.
The 1l was just by chance, i grow my own raspberries and freeze them (as i end up with loads) 1l was exactly how much juice i got out of 1 bag of berries out of the freezer.
If i do it again, i might try with 2 litres, i suppose it depends on how it ages...
Well, as long as my will power permits probably, i suspect it will be gone by the end of the Xmas period.
I would like to leave it for a couple of months and see if/how the flavour develops. Ill have to lock some away.
Well, this is a couple of pictures of my Coopers Wheat Beer with 1 litre of raspberry juice added after the initial ferment.
This is after 1 week in bottles (couldnt resist) moving it to storage now for a few weeks.
taste wise, its fairly thin (which i think wheat beers are??), no overly...
I am thinking of doing the Coopers Real Ale kit but i would liek to try dry hopping as i do like a hoppy flavour.
So, which hops would you recommend?
Also, how many should i use for a 40 pint batch?

Yes, all i did is mash up teh fruit and seive it through a nylon seive.
there may be some very fine particles that have got through, but i cant see any "bits" as such, i suppose i will know more when i come to bottle it.
This was my first ever ber brew and ive justabout finished drinking it.
I was quite impressed with it, it is fairly bitter, has plenty of "body" and is all together a nice drink.
I brewed mine with 1 box of Brew Enhancer 2.
Well, the gravity on my Coopers Wheat kit (brewed short at 20litres) was down to 1.010 (from 1.040) with no signs of activity.
So, i have mashed and strained some of my own frozen raspberries which resulted in 1 litre of pure juice.
Added to FV, will leave till activity dies down and bottle...
I am planning on adding my fruit (fruit juice) after teh first fermentation has stopped.
To combat the infection risk i will CT my fruit before adding.
