I met the lead brewer of Burning Sky & he spoke in depth about using oak barrels in some of their experiments. It was a fantastic talk & I wish you luck . You will have great fun no matter what happens & the knowledge you gain from it will be fab . Cheers & please share the journey / outcome !
 
Great suggestion on serving from the cask but its a shared brew so the cask will be emptied and we'll split the volume - we did 30l each so we’ll aim to share the batch. I think by bottling it’ll give more longevity and any changes could be tracked over time etc.
