    Off taste help

I'd say your idea of brewing you next pale with tesco ashbeck water is a good shout. I think if you you can rule out water then a low level contamination seems like a likely candidate. Although I would always expect that to get worse or more noticeable as the batch ages. Another thought: What...

Which movie(s) have you watched recently?

Just watched Cruella on Disney plus. Absolutely brilliant. Emma Stone is fantastic. Very high quality and well thought out origins story in a similar vein to some of the marvel/DC stuff. Surprisingly adult themes in parts too so not one for the younger kids. Great soundtrack too.

What are you drinking tonight 2021?

That is a criminally inefficient use of a BBQ! It would appear that roughly two thirds of the grill is being occupied by vegetables. Good god man.... 😉

    Yeast for Chouffe clone.

I think it's quite a simple recipe. If I recall correctly la chouffe is just pilsner malt and sugar. I'd go 10—15% sugar. 10 grams of crushed corriander seed at the end of the boil. I'd bitter with some of the goldings and then a mix of goldings and saaz say 15 mins from the end of the boil...

    Yeast for Chouffe clone.

Sounds good. What's your recipe for le Chouffe?

    Yeast for Chouffe clone.

If you're brewing today I'd go with the M31 Tripel out of those and keep the temps low(ish) for the first couple of days then ramp or allow to free rise after that. If you can wait, the Ardennes strain is the Chouffe yeast. If using dried the MJ French saison yeast would do a good job at...

    Go-to Yeasts

The best dried English ale strain I've used is, hands down, Lallemand London ESB. It doesn't flocculate well and is a low attenuator but the flavour profile is ace. I know you're mainly concerned with American and English strains but I'm a big an of the MJ Witbier (M21) yeast. Their French...

    T-58 Yeast

Finally got round to using T-58 in a batch the other weekend. Fermentation seems to be complete so thought I would report back with my initial impressions/ findings. I pitched 1.5 packets (16.5g) rehydrated into 18L of 1080 wort. This was the Brewdog Dogma recipe so very heavy/complex malt...

    T-58 Yeast

I must have misread. I think it was this thread but looking back now the guy is speculatively suggesting that BE256 is the De Ranke strain, rather than it being blended with something else. Apologies...

    T-58 Yeast

I was just reading on a hbt thread that de ranke blend t58 with be256. I know it's all hearsay but I could see the sense to that as it's a super attenuator and supposedly very low ester/non phenolic. Might need to give that mix a go.

    Homebrew Convention?

BrewCon London is the the biggest one in the UK I believe. I went to the first one in 2018 but missed 19. It didn't run last year for obvious reasons. I believe the organisers are hoping to be able to go ahead with it in October this year. https://www.brew-con.co.uk/

The 'Recommend me a TV series' thread

Finished watching The Terror last night on BBC iplayer. It's a fictionalised account of a mystery surrounding a true life 1840 something exploration mission to find passage through the artic. Great cast and lots of great performances. Fantastic psychological thriller. Very unique. Would highly...

Which movie(s) have you watched recently?

Watched JoJo Rabbit at the weekend. Brilliant subversive comedy drama about a young boy joining Hitler youth. Written and directed by Taika Waititi who also plays Hitler in it. Fantastic cast, great story, loads of laughs but harrowing and heart warming at the same time. Fantastic stuff.
