Wort chilled overnight but krausen - right to pour away?

Yesterday morning I brewed a 10L recipe and chilled the wort down to 40C, but rather than waste water I then left it to settle and chill further overnight, intending to transfer clear wort from the pan and pitch the yeast this morning. A lid was on the pan, but I forgot to seal the lid's small...

How much to dry hop instead of at end of boiling?

I'm brewing a Biere de Garde and was about to transfer the wort to the FV when I realized I'd forgotten the hops I should have added at the end of the boil before lowering in the chiller. It's roughly the GH recipe, just using Saaz instead of Tettnang. So, I'll dry hop them in a few days' time...

    Two Dunkelweizens, both stuck fermentation

Is there an obvious reason why two Dunkelweizen fermentations might stop early, at 1.022 in one case and now 1.027 in another? The respective OGs were 1.056 and 1.060, and in each case the fermentation appeared to bubble away normally for a couple of days, but hadn't progressed fully when I...

British beers - flatness and head

I feel dissatisfied with how my British-style beers are carbonating and forming a head. The PET bottles firm up within a week or so, and I don't rush to open them, the taste is good and the beers are drinkable, but they just don't have much of a head and carbonation is only just OK. The problem...

    Dunkelweizen + temperature

I'm wondering how to make best use of my small stock of hops and also thinking ahead to the colder months. I've noted some of my parameters/limitations in the signature below. Apart from liking Dunkelweizen in any case, I think that some (frozen) Saaz leaves left over from a 10L Tripel brew...

Scaling quantities - "liquor" and "makes" volumes

I am trying to scale down a recipe for my 11L pan and just need a bit of guidance about "liquor" and "makes" volumes. Maybe I have understood, or maybe I need pointing in the right direction.... Since it's a popular book, I'll say that I am scaling down the Belgian Tripel recipe in the 2019...

    OK with frozen blackberries

I've just noticed blackberries in a local field and picked some this morning. I was thinking cheesecakes but I found I'd got 750g and then looked for ways to use them.... Lots more are ripening and although it's in a built-up area of South London I think I could quickly gather a couple of kilos...

Would it make sense that using too little water produces a stronger beer?

As a first time brewer, I thought I was carefully following the recipe for a Mosaic IPA from grain. But while I should have had around 5L from the wort, I only got about 3.75L into the fermenting bucket, and my guess is that I must have measured pints instead of litres for the mash/sparge stages...
