    Too much sparging washes out the tanins into the wort giving it an astringency. Not sure if thats what you're describing here though.

Mine is chockers with bindweed, couch grass, burdocks, mint, and horseradish having been untended for many years.... plus its very heavy clay.     I have an old dj full of turbocider that wasnt very good. I removed the airlock as I needed it somewhere else so its been sitting there for some months with no airlock. Should this be vinegar by now? How can I tell if its vinegar? Is there anything else I need to do to it to make it cider...

    If you're doing kits, then I would recommend drawing off some of the wort, then boiling up your chosen spices etc. before cooling and adding back to the fv.
