    Is this fermenting? Or am I still at a lag stage? On day 3 it looks like I have a healthy krausen, but no airlock activity. Doesn't look particularly turbid in there but I can see some bubbles rising through the FV. Using WHC Labs LAX yeast at about 17°C.

    ..But also I think the original statue should have be torn down and a new one raised depicting the unimaginable horror, pain and mental anguish he would have caused. If people were embarresed or two ashamed I'd be happy with this moving to a museum.

    I don't think leaving the statue 'as was', was a case of learning and moving forward. If a plaque had been erected describing how he'd made his money next to the statue, or a another statue had been created that depicted what he'd done to get his ££ then I would agree. Learn, move forward yes...

    Homebrew Dry Irish stout. I never really noticed conditioning times (as I've always finished the batch too quickly), but this has mellowed out over the past month and become nicely balanced from tasting not too good at all.

    Congratulations! How do you feel about sharing your recipe? I put in a Schwartzbier (think it was OK 🤔), would like to see what could be improved.

    Lingering bitterness

    What hops are you using out of interest? I find with my tap water higher alpha hops, particularly citrus profiles (Citra, Sabbro, Harlequin etc) I get an unpleasant late bitterness but otherwise the beer would be great.

    Chemipro San

    Juat a heads up. Any used Chemipro San 'no rinse' sanitizer? At least I assumed it was no rinse. Had quite a string iodine smell and left an aftertaste in the beer. This was either just from foam from the FV or Keg. Ruined a couple of batches. Did similar quantities to Star San/Chem San

    What did you brew today?

    Brewed a Dry Irish Stout using the Craft Beer & Brewing recipe. Basically a familiar 70/20/10 recipe but 2% Acid malt, a 50/50 split of CTZ and EKG hops at 60 mins (smelt pretty good) and fermented with WY1007. Feel like this is a pretty versatile yeast!

    I do small batch 5L brews - brew in a bag. My kettle is only around 11L and typically I only use 7.5L of total water + grain and I'm not close to over-topping.

    I know, shame on me 😄. I can never wait. Great idea! Going to give this one a shot. I'll leave the IPA another week, it's still a bit young, so that will give me something to sample at the weekend!
