    Beer clearness.

Hi, I've got a beer clarity problem. My beer clears beautifully after keeping it for two months in plastic 2l bottles, looks lovely. BUT, whenever I open the bottles the escaping gas always stirs up the sediment at the bottom, which doesn't clear. Is there any cure for this? The beer is...

    Sorry to have to ask....buuuuuuuut..

Gout. I know this might be a very painful issue for some people but I feel like I've got ask. Is home-brewed beer more likely to give me gout than 'mass-produced' beverages? If so, is there a scientific reason why - something to do with the higher amount of filtering involved? I'm 33, drink 4-6...

Country wines straight into the Demijohn?

Hi, after reading a few country wine books they all seem to recommend doing an initial fermentation in a plastic bucket rather than a DJ. I haven't got a bucket, can I shove everything straight into a DJ? I know I'll have to rack an extra time. Cheers

    What to brew now ?

Parsnips are on special offer all over the show at the minute, why not get a few bags and get a parsnip wine on the go? By all accounts it makes a lovely, sophisticated white wine. (However, it's a long term project that will probably take over a year!)

    TC in wine bottles?

Hi, just finished a batch of TC in primary fermentation and was wondering if it was safe to store it in sterilised wine bottles? I'm not priming the bottles (as I'm not sure I should be using these bottles in the first place!) Have I just created an exploding cellar??

    tesco fresh tropical juice alcopop

If the hydrometer stays at the same reading over a couple of days it's pretty safe to assume that fermentation has finished (don't let the brewing pro's hear I told you that though!)

As far as I'm aware being slightly cold won't hurt the yeast (it'll just stay asleep until you bring it up to a warmer temperature). Unless it was either freezer cold or boiling hot it should be ok.
