    Does extract actually need boiling?

    you need to boil the extract to gain the bittering quality of the hops. No boil no bitterness. beer kits have the hops already boiled in. (well they have bitterness in them anyway whether that is from hops or not is subject for debate) Sounds like what youre doing should work quite well.

    well this is quite often done on a proffesional scale so should be ok for you. i would just pitch the yeast as soon as the first batch is in there. andas normal maintain correct temparature.

    Also its a good idea if possible to add sugars slowly to the mix. dogfish head do a beer at 18% using this method.

    Kyral in your method you dont add extra yeast. as ive already said ive primed the bottles with sugar for carbonating i was just worried that id taken out too much of the yeast. i think i'm gonna give it a couple of weeks in the warm then if nothing occurs drop 2-3 granuals of yeast into each...

    ok cool. really you fine first....? thats promising. well its been sat in the warm for 4 days now i'll have a little look tonight maybe see if theres been any activity. so you definately get good carbonation like that? and no sediment?

    Just wait till its stopped bubbling completely. the bubbles mean its still converting sugar to alcohol - fermenting. you c an stop this early by popping in a campden if you like and leave a sweeter andlessalcoholic drink if you prefer. if notthrow a capden in when it has fully stopped any...

    well i fined and primed at the same time so considering no bubbles would mean the sugar should still be there. i didnt forget the sugar the problem was that i stripped too much yeast out.

    Just wondering if anyones got an opinion still on whether the elements will be better below or above the hop screen. I'm thinking below so it will be easier to remove the screen and possibly wrapping some piping round the edge to make it wider and thus higher in the copper. Any advice is welcome.
