Hello, wondering if I could get a bit of feedback on a best bitter. Though emulating the Fuller's hopping regimen to some extent, I prefer bitters in the more Yorkshire style, to the extent I as an American have had them, and learned from N. British brewers. In particular I've tended to be a bit heavy-handed on late and dry hopping. Wanting a pretty traditional English approach, nothing "American" in hop aggressiveness; a good, honest, balanced N. English bitter. Also, thoughts as to the mashing regimen. I do try to keep best bitters pretty balanced into the beta-amylase and fermentability range, with strong bitters mashed-in a touch higher. So at 66C x 90 minutes...your impressions. Thanks.
