Elderflower wine sweetness

One of my first fruit wines was Elderflower champers and whist pleasing it was a bit too sweet for my tastes as Elderflowers are now comming out Im thinking of giving it another try. So do I use less sugar? Let it brew longer? Or make wine instead of champers?

Sweetness says incomplete fermentation to me...that could be down to the yeast not tolerating the ABV (so less sugar or higher tolerance yeast needed,) or like you say, impatience :p

Brew one up following the top recipe here - use a good wine yeast and give it plenty of time.
