This weekend I intend to knock up some kind of pale ale [23l] from approx 4500g maris otter + some hops to about 40 ish ibu I have chinook 12.7 % , simcoe 12.1 %, cascade 7.1% challenger 6.1 % anyone any ideas how to put something nice together from that ?

How about using your 4.5 kg of pale in a 90 min mash at 67 C
Then boiling with 50g of cascades for 90 mins and then with a 25g addition of Chinook for 15 minutes for flavour  and then an aroma addition of 20g of Cascades at 80C during cooling :thumb:
This should give 23L of 4.3% ale at 40 IBU :drink:

HI

Thanks for the info it looks good will try it tomorrow evening as weekend did not go to plan so its going to be a tuesday night mash up after work. I got the hops from craft brewer and they are superb quality, not cheap with the exchange rate so poor but they are special and after a couple of brews with them already I can say the end product is worth the extra.

Cheers
