Has my cider finished fermenting?

All,

I have 8 gallons of cider, started fermenting 4th Oct with a S,G. of 1050-1055. All have now got a S.G. below 1000 but are still producing bubbles of at least 1 per 20 seconds.
Do i rack and de-gas or leave until bubbles are below 1 per minute?

Thanks for the reply Klaus,
I've never bothered with S.G. with my wine ..... just bung it in and wait but with the cider I thought I'd
do it proper.
