Change of plan perhaps…I thought I had 2x us-05 but now I look I’ve got these 2 yeasts only. Could I make a decent saison using only extra pale malt?

Well most "real" saison is made with pilsner malt, which is their equivalent of extra pale....

But M29 is repacked Belle Saison which to be honest isn't the most characterful of saison yeasts, some people use it in British styles by fermenting it on the cool side.
