You can ferment golden syrup, but it wouldn't be mead, because mead is made from honey.
 
Golden syrup, lemon and cloves.

Leave it well alone once bottled, for at least a year.

Opened a bottle last Christmas, from the year previous to that, and it was ok. Not the best, but something different. May age better, I'll let you know next year. ;-)
