Mexican style stir fry

serves 2

ingredients

350g Mexican style frozen stir fry.

240g Cooked diced frozen chicken.

340g medium egg noodles.

50g unsalted butter.

1tbsp rapeseed oil.

1tbsp dark soy sauce.



Method: put some water in a pan and bring to a boil add the egg noodles with 1tsp of salt then simmer for 20 min then add the rapeseed oil and the butter to the hot wok then add the diced frozen chicken and stir after 10 min add the Mexican style stir fry and add the soy sauce cook for 10 min then drain the egg noodles and add to the wok stir for 3 min then serve.

I love a stir fry, used to do a lot when I got home from work late and didn't have much time in the evening. A bit of vinegar or lime goes well too and chopped coriander to garnish
