Seem to be building a long list of beers i want to brew but not getting round to making them!

3.5 kg MO
0.5 kg German Carafa II
0.5 kg Chocolate malt
0.34 kg Crystal 40°L
0.34 kg Crystal 80°L
50 g Black Patent malt/roast barley

28 g Magnum 60
28 g Magnum 45
14 g Cascade 6.0% AA for 30
14 g Cascade 6.0% AA for 15
14 g Cascade 6.0% AA for 5
55 g Cascade for dry-hop


not sure what yeast but probably US-05

1.2 g/L Magnum (12.5% Alpha) @ 60 Minutes (Boil)
1.2 g/L Magnum (12.5% Alpha) @ 45 Minutes (Boil)
0.6 g/L Cascade (6% Alpha) @ 30 Minutes (Boil)
0.6 g/L Cascade (6% Alpha) @ 15 Minutes (Boil)
0.6 g/L Cascade (6% Alpha) @ 5 Minutes (Boil)
2.4 g/L Cascade (6% Alpha) @ 0 Days (Dry Hop)


Single step Infusion at 66°C for 60 Minutes. Boil for 60 Minutes

Fermented at 20°C with Safale US-05
 
looks like it'll be good. If your worried about the barley giving flavour you could try cold steeping it to get the colour but not the flavour. I have yet to try this method but it is planned for my next Black lager
 
thats not a bad call!!

i may up the barley and steep it. cold or hot water? how long..?
 
I did this Cascadian Dark Ale recently which seems to be going down well

Crafty Mole OG 1.040, 36IBU, 16.5 EBC 2050 Litres

450Kg Pale Malt
44Kg Munich Malt
25Kg Carafa Special III
16Kg Crystal Malt (120EBC)
7.0Kg Roast Barley
6.5Kg Carafa Chocolate

2Kg Galena 14.7 IBU for 85 Minutes
1.5Kg Magnum 14.4 IBU for 45 Minutes
0.5Kg Cascade 7IBU for 15 minutes

2.0Kg Cascade for 80C Steep
2.5Kg Cluster for 80C Steep

Dry hop with cascade in the cask

We actually ran off just over 2BBL (330L) to make a stronger version for sale next year, so the figures won't quite add up re scaling down . . . although a true Cascadian should be around 1.058-1.070 . . . Only real comment I have with it is that it needed more hops bittering, Flavour and Aroma. If I was to make it again I would probably go for 2.5Kg of both Galena and Magnum 2Kg Cascade at 15 minutes, and up the Cascade or Cluster to 4Kg.
