I have a book with a recipe for Sunshine Wheat Beer which I fancy making in order to get me drinkable stocks up as quickly as possible, but I'm a bit confused with how they describe the all grain method compared to the extract. Can someone please let me know if I've got this completely wrong?
Extract method:
Steep 113g Gambrinus honey malt
then strain and add
1.8kg Alexander's wheat malt syrup
1kg wheat DME
34g German Hallertau Hersbrucker
Boil then add
7g Belgian bitter orange peel
1tsp crushed coriander
1tsp irish moss
after 14 mins add
1tsp crushed coriander
7g Belgian bitter orange peel
All grain method:
1.8kg American 2-row pale malt
2.3kg German wheat malt
0.45kg rice or oat hulls
specialty grain
Now my questions are:
What is the specialty grain in this instance? Persumably the Gambrinus honey malt?
Am I supposed to add a certain type of rice or will just ordinary rice do?
Do I need to use american pale malt or will maris otter do?
Is the crushed coriander just standard dry coriander spice, or fresh leaf coriander?
Where am I supposed to get Belgian bitter orange peel? Can I just use normal orange peel?
