I know there is a few recipes floating about here - but I was hoping for some specialist advice on what exactly I should do with this amount of bananas? (donated to me by the local Isle of Man banana mafia)

I took this photo last week and they are only starting to go properly black right now which means I should probably start very soon. There's at least 40 bananas there (I'm guessing) so I'm probably looking at a 5 gallon FV, right? Any sort of additional juices to be added in (obvious for a normal WOW, being grape)? Also I'm guessing I have to boil in a mash? Any ideas on the amount of additional fermentables (sugar) I should add for a 5 gallon FV with his amount of fruit?
 
Here's a Banana Wine recipe I use for a 1 gallon 4.5 litre must.

1.3 kg Bananas with Skins on
100g raisins
1kg sugar
1 lemon and 1 orange
1 tsp of pectolase
1 crushed campden tablet
1 tsp of yeast nutrient
1tsp of yeast.

you don't need to boil the bananas, you just slice the bananas up into disks with the skin still on. Put the bananas and raisins into a FV or bucket then pour on the sugar. Then pour 2 litres of boiling water onto the fruit and stir until all the sugar has dissolved. Leave to cool. Add crushed campden and leave for 24 hours.

The next day add the juice of the lemon, orange and the rest of the other ingredients. Ferment on the pulp for 7 to 10 days stirring daily.

Strain into a clean DJ and ferment out as usual.

how long before you can drink it start to finish ...
 
I made 3 gallons last year, the recipe I used did call for the bananas to be boiled for 15/20 mins.
It's all been sat in the DJ's until last week when it was bottled, so you have to sample it at the time of bottling :D WOW...the swmbo won't let me anywhere near a bottle now. I've even made a label with her name on it...just for a giggle.

It's worth doing and I was reading on another site where this guy buys the bananas when they are cheap from the supermarkets (over ripe) and throws them in the freezer until he have enough for another gall.
 
I could probably drink 4.5 gallons in about 3 days. Probably 2 if the wife was allowed to join in.

then can you drink it on the day of bottling or to you have to wait months/ years ... ...not how much can you drink lol...

Started mine in July last year, as I said when we tried it WOW. It's only 8 months old but it very drinkable :whistle: what it'll be like in another 8 months who knows??....I know I'm going to make loads more...that's for sure. :grin:
