Do I need to use campden tablet every time I rack my wine? What about when bottling?

I've got a gallon of mead and a gallon of ginger wine. I want to transfer the mead into 2 small glass demijohns. Do I use a campden tablet when I do this? When I bottle my ginger wine do I have to use them then too? I'm getting very confused:-?:-?
 
I've read (and roughly follow) that a sensible approach is 1 camden per gallon/DJ at every OTHER racking, the main one being the rack you do immediately before bottling.

For a clean source, such as supermarket juice wine, I only used camden once and some don't at all.

I think the levels 1 camden per gallon adds is pretty low compared to commercial wine sulphate levels, but I'm trying to add as few chemicals as poss

The batch I've just put on tonight, I'm not using camden at all, for £3 i'm giving @tau recipe a go (see below)
