Fermentation Vessel - Empty using tap?

Hello,

Reading around the subject it seems that in most cases when emptying the FV a siphon is used. When emptying the FV into (say) a bottling bucket is it okay to use the tap on the FV (with tubing to limit aeration)? Or must a siphon be used?

Additionally, but on a similar subject, is it necessary to use a second FV (secondary fermentation) when doing a kit brew? If so, same question as above - Can the wort be transferred using a tap or is a siphon necessary?

I have a FV with no tap which I use for primary fermentation, then transfer to a FV with a tap typically after 7 days, then leave it for 7 days before bottling (with a little bottler) using the tap. I use this approach as it gets the beer off the muck, while giving it a little more time to clear before bottling. Also it gives me the option of dry hopping.

Obviously I use a syphon when transferring from primary to secondary.
