After X10 kits it's time to join the big boys.
Landlord style recipe kit
1 gallon
Pale malt 850g
Black malt 6g
Styrian and Golding hops.


An hour with the grains in a bag. Between 69 & 72°

At boil start
Golding and Styrian 6 G each
Then after 45 mins Styrian 4g added

Stove top vessel cooled in sink / ice.

Into bucket with tap and yeast added.

Found tap had a slight leak after 2 days so into a Demi John with airlock. Left behind trub.
SG at start 1032
Yeast: Crossmyloof ale yeast.
Temp around 20° or less. Never below 16°

After 4 days SG dropped to 1016.
Quite surprised at that drop speed.
No bubbles rising or airlock movement.

I'll be leaving it in the Demi John while away for New Year.
Any thoughts folks?

After 3 days stopped fermentation.
It has been racked once from a bucket into this demi.
Now at 7 days and no sign of clearing. Thin sediment on bottom.
I'm in no rush but thought I might be seeing some evidence of clearing by now.
I hadn't used any ' clearing ' agent.
Smells great.

The demi john has now been in the cold garage for 10+ days.
Still not clearing although there is a thin layer of sediment at the bottom.
With a torch on one side of the jar, I cannot see much from the other.

Should I prime my bottles and now leave in a warm place for a week before back into the garage?

Thoughts much appreciated on this, my first grain brew

tbh m8,
Doesnt matter, as racking off no matter how gentle you are itll upset the trub.
Just prime the bottles,two weeks warm place for carb up. then colder place for conditioing.
As mentioned you done mint! not jumping into a larger volume brewday.
me & most people started the same.
Plus your asking advices n i like that m8, after neasrly 40 years homebrewing im still asking lol.

As Bri says above. Don't forget to put some in 500ml PET bottles so you can tell when they are carbonated. One of the pleasures is giving your PET bottles a squeeze, a bit like watching your tomatoes turn red :D
 
What's gone wrong?
After 3 weeks in the cold garage, not cleared . Also, flat, just a nice malty taste.
I've tried 3 bottles so far, over the previous week. All the same. Flip top, PET and glass.
Would even more time in the cold, improve things?
I can't see it getting its fizz back. But maybe it will clear slightly?

Thanks folks. This looks like a steep learning curve for me.

That's only 5 days to carbonate in the bottles.
If you use at least 1 plastic bottle, you can squeeze it every few days to see if it is building up pressure.
Doesn't need to be a pet bottle, I reside an old 500ml pop bottle for the purpose.
(that is also your first taster bottle, so it's not sat in a clear plastic bottle for months)
