Made an IPA, and while bottling it had a sneaky taste and it was a cracker. Floral/fruity taste and a good rounded beer. Forward a couple weeks and, whilst still a decent beer, its lost huge amounts of flavour. Has to be the first beer you have or it'll taste lifeless and bland.
Next beer was a dunkel weissbier. Out the fermenter gentle hint of cloves, and banana flavours. Couple weeks later, it tastes exactly like a dark weissbier should. Couple weeks later, and it tastes nothing like a weissbier. None of that clove/banana taste. Its like a run of the mill beer. Not bad, but nothing special. More like a continental dark lager.
Whats happening to my beer? Do I just need to drink a lot faster?
