Thanks for the info. Any sanitation before putting the tea in the secondary? Boiling for 10 minutes? How about putting the tea into the keg while its carbonating for a week or so?

Anyone know if you can get sodium levels down from water that's been through a softener? My level is 160 ppm. I think I got a handle on the rest of my water chemistry.
