I use AMS to get to pH and half a Campden tablet, ground and fairly pleased with my results. Once I'm happy with the rest of my processes I'll start adjusting water.
Creating my own setup has added fun and a bigger sense of achievement to my brewing odyssey. I bought an old Buffalo G30 last year and with a clean-up, some mods and additions it's now a very effective all-in-one. More on that here.

What do you guys use for priming when bottling?
I'm doing all-grain in a custom-built all in one. I recently added a recirc pump and along with a less dense mash my BHE has definitely improved. Not sure how viable that is if you're BIAB but thought it might help.
Wow that is patience!! Not sure I'm looking to go that long but will definitely go for a couple of weeks. Looking forward to hearing about the darker version.
Mine is all Saaz, very interesting aroma during the boil and looking forward to it. Not sure if the malt has more sugar in it but it left a hell of a mess on the floor of the kettle, so much it tripped the safety a couple of times!!

I've just done a brew using the recipe @AlDaviz posted, which I'm going to bottle, but I'm interested in using the quick lagering technique.
Will the beer still bottle condition OK after lagering?
