Scottish Craft Brewers Competition 29th January 2012

Everyone worked hard to make sure it was a very smooth competition, well done Arek and Calum especially! Steve Innocente's American IPA was outstanding, well deserved win and I hope he posts the recipe

100 things to do before i turn 21

How about - Get a job Just kidding :P I think 21 is an interesting age and you start to seek out new more fulfilling experiences rather than getting drunk and having sex with frozen chickens (some of us anyway). My list is more for my time in life and probably better as things to do before...

    Urban People's Common Lager

How did this turn out? They really use Maris Otter? Brewing an Anchor Clone on Saturday and may pitch this on top of the yeast.

Looks tasty Calum! Are you still having a brewday on 27th?

    Blue moon recipe?

If you can dig it up, the brewer was on an old episode of basic brewing radio. The only thing I remember was they used the normal American ale yeast. I.E. US-05

    price of Hops

This should be obvious. Look for the most recent crop. You won't find 2011 hops until the end of the year.

    price of Hops

Often the places selling the pricey hops are the ones selling repackaged brupaks hops, usually from a couple of seasons ago. Who would pay £4 for a pack of Cascade when you can get them for 2.50? Consider the wholesale price for Cascade is £6.95 for a kilo (for a 5kg pack min) then decide if...

    Pale malts

Funny you mention the malt whisky/GP thing, I noticed that with the Timothy Taylor clones I would make, I thought it might have been in my mind though because I knew the connection with whisky making. When I posted about it someone else said their wife noticed the similarity too.

Agreed the Lou Pepe Kriek is a stunning beer, best fruit beer in the world that i've tried and one of the best sour beers.

    Dry hopping a wheat beer??

Not appropriate, not even in an American wheat beer. Aromas should be from spices and/or yeast. That said, it's your beer and you can do it if you like.

    anyone used The Malt Miller?

The other importer was wanting 7 or 8 quid a pack of hops not too long ago, I think if it wasn't for that the Malt Miller, Barley Bottom, Worcester hop shop etc might not exist.

    Burton WLP 023 yeast

For the first time in a while i've got all 6 of my cornies full and i'm putting another 10 gallons of wort in the fermenter this Friday for bottle ageing

    anyone used The Malt Miller?

He's built up a following through a great range of products, listening to his customers and first class service. Most of my orders have arrived in under 24 hours (the last shop I used would take about a week). It's also run by someone who brews all grain brewing and will take care of the malt...

    Dry hopping with Citra Pellets

I used 50g whole and this gave a nice aroma. Citra are pretty oily/pungent so you don't need a great deal. I have nothing against 100g either.

    Burton WLP 023 yeast

Yeah it does that, it is a true top cropping yeast. It will just hang and hang there. Check the gravity and give it a taste. If it's done just rack it as normal. Skim some off the top and store 100ml in the fridge and you can use it in your next brew if you do it within a week.

    us-05 or californian

I have been meaning to to a side by side with the two yeasts, I think it would be a good experiment. Despite my slagging it is clearly possible to make great beer with US-05. I tried Dunfie's Punk IPA clone with US-05 and it was great. There is no doubt in my mind though that when I make beer...

    us-05 or californian

I've used both extensively and the US-05 consistently attenuates significantly further and doesn't taste as clean, I tend to get a bit of an alcohol note from it. I now never use US-05 but use WLP001 quite a bit as the beers turn out much better. They are not necessarily genetically identical...
