    Blond Biere de Garde V1,000,000

I've made loads of these but as they're on of my favourites I'm always looking at ways to improve them. It's a very simple recipe but I want to get it super clean with no oxidation. As with my last brew I've gone back to dried yeast because I'm worried about my yeast handling and want to rule...

Back on the brewing wagon! XX Bitter

Work has got in the way of brewing lately but with things getting quiet for January I managed a brewday this week. I wanted something similar to De Ranke XX Bitter which is a Belgian blond with tons of bitterness as the name suggests. I took some advice about the hops and yeast from an article...

    Onion taste in hoppy beers

I've never been a huge fan of hoppy beers but didn't really hate them but I've noticed a cooked onion flavour in some of them and I can't seem to shake it off. I've noticed it lately in Punk IPA, Stone IPA, Sharps Wolf Rock, Hop House 13 and a fair few others. Sometimes when I learn to pick...

BM brew 4 - Orval Clone

My last Orval clone went down really well so thought I'd do one on the BM. I've found two different step mash programmes allegedly from the monastery so gave one a go. Recipe: Planned OG - 1.051 Planned FG - 1.004 IBU - 43.5 Yeast - WLP510 - Bastogne and Orval dregs Mash: 3kg...

Braumeister Brew 3 - Belgian Pale

For my third brew on the Braumeister I thought I'd do something to use up my 500 ml bottles so I went for a Pale ale. I want it to be fairly sweet yet light. It's a tweak of a beer I did last year and unfortunately I couldn't get the Antwerp Ale yeast so went for the one that I found closest to...

    Vintage Beer - Patrick Dawson

This isn't strictly a brewing book but I thought it would be good to have a review because I found it quite handy. I've wanted to look into this subject since trying a very old bottle of Fuller's Vintage Ale which completely blew my socks off. It's a guide to which types of beers benefit...

Braumeister Brew 2 - Blond Biere de Garde

My other half has taken my daughter to visit relatives for the weekend so it's brew time again! This is my second with the Braumeister plus and I'm going for a similar brew but with a different mash schedule and different amounts of water to see how it goes. I used 26L of water last time...

1st Braumeister brewday - Amber Biere De Garde

A combination of factors such as needing to clear space, not having much time, a leaking mash tun and having a bumper month in Feb meant I've treated myself to a Braumeister Plus. I've been wanting to do more step mashing to enhance the body and flavour of my beers and now I can. The first...

    AG28 - Flanders Blond

For this week's brew I'm going for a blond style French beer. It's pretty similar to the last few I've done with more or less the same method but a lighter coloured grain bill: Est OG: 1.065 Est FG: 1.013 IBU: 27.8 Est ABV: 6.7% Yeast: WLP011 European Ale Mash: 75 mins @ 64C 3.5kg...

    AG26 - Biere de Printemps

This is a re-make of my Ardennes Printemps beer but with a more authentic yeast for this style. I harvested yeast from La Chouffe last time but now I'm using WLP011 which I understand is a German ale yeast so it'll much cleaner. It's one of the yeasts recommended in Farmhouse Ales for the style...

    Biere de garde at lidl

Anyone who reads my posts will know I spend a good bit of time banging on about Biere De Garde. This style of beer is nearly impossible to find in the UK but Lidl is selling some at a very reasonable price so I thought I'd give you all a heads up. They're doing champagne bottles of Blond de...

    Spelt Saison

This is a copy of a beer called saison d'epeautre which uses a third spelt in the grain bill. It's a very pale beer and the spelt adds a flavour that's similar to wheat but more nutty. The hop bill looks excessive but I had tons of low alpha hops to use up. This beer should be well carbonated...

    Ardennes printemps

This one's inspired by French Biere De Mars which is a spring beer. From what I've ready it's meant to be a bit more hoppy or malty than the regular Biere De Garde but I've only tried a few. I based the recipe on a suggestion from the Farmhouse Ales book but went with my favourite Belgian yeast...

    AG24 - Golden Sorachi Saison

I've been quiet on this forum lately but thought I'd post my latest brew. I pack away my brewing gear for a bit to have my garage demolished and a new man cave built so I was using up a load of ingredients I had lying around. I was originally going for a Golden Biere de garde recipe but...

    AG2 - Chouffe Houblon clone

My second AG and it's another Chouffe brew, which I made this Monday. I'm going to stick to this style because it's quite simple in terms of ingredients and I'll know when I've got it right. This time round the sparge went better due to me making a DIY sparge arm but the ABV finished a bit lower...

    Resealing a pack of yeast

I used 4g of a safbrew sachet to bottle a batch of beer and have used a clip to seal it back up again and put it in the fridge. Is it worth trying to use the remainder to bottle my next lot or should I just chuck it? Has anyone else tried this?
