I am aware that some of you use these as fermenting vessels, however I was just about to buy one (Asda) and I realised that is doesn't have a normal screw cap. I only want to use this for short-medium term wine storage.

Does to top go back on after you have removed it?

It will sit on top and you can drill out a hole in the top for a hung, I removed it entirely and replaced it with a red/brown rubber cap which takes an air lock. It cost about £1.25 and I think they are sold as "better brew caps". I'll be able to confirm the name once im not using my phone browser
 
I have a Tesco 5l bottle I'm using for my second brew. I just used my rotary tool to drill a hole slightly smaller than the bung and pushed it in. I've got a bubbler in it and it works fine. I'll post up a pic in a bit, though for you want I think a brew cap would be better but it's not the end if the world.
