Hi knowledgeable and experienced brewers. I have no idea what I am doing. I am currently waiting for some up-cycled olive oil flip-top bottles of cider to start exploding in my fridge. But I ran across this:

I was thinking of buying it and pounding in this:

And then sterilising as best as possible and just pouring in some cider and then feeling happy while drawing pints of drink from old-timey kit.

Questions:

1.) Has anyone done this?
2.) Is it feasible to drill another hole for some low pressure CO2 to displace the O2 and inhibit microbial growth?

Thoughts?
 
Thank you gentlemen for your thoughts. I like the idea of drilled corks and rubber bungs -- not a bad band name either. I will give those some thought.

Does anyone have any idea how these sorts of containers were used/made to function -- eg, how is it that these containers were tapped when they were in use?
 
Is that not for soda/ginger beer?
Sure I've seen them on Bargain Hunt.
