I plan on putting a Geordie Mild kit on either tonight or in the morning. Ideally i would of liked to use a kilo of spraymalt or brewing sugar but forgot to get some. I do have some Golden Syrup and brown sugar in the cupboards. I was thinking maybe using the whole bag of sugar aswell as half of the Golden Syrup.

I have no experience in in using brown sugar so don't know how it will affect the taste. Would it be ok to use or do you think it would leave the kit tasting weird?
 
for a mild i would leave out the golden syrup but using the brown sugar is a good idea , it is in some/many all grain mild recipes .
 
I ended up with a couple of Geordie Mild kits after the wilkinsons sale, and want to try something really different with the second (the first will be useful for a sighter). What would you add to a mild to make it really different (I'm thinking spices rather than sugar)?
