my wonderful wife (shes wonderful cos she lets me brew in our appt. kitchen) has a half kilo jar of homemade cherry jam ....any ideas for using it for an ag brew? maybe a stout or dark ale :wha: or if not maybe a jam and cream sponge :hmm:
 
Hi,

Not sure if it would be any good as a adjunct in beer as I suspect it would cause a haze in your beer but you could experiment! If you did want to use it I would add a small amount it to your beer after primary fermentation is complete

.............However you could make Jam wine

1.5 Kg any Jam
750g Sugar
100g grape concentrate (I would probably use a carton of Supermarket white grape juice)
225g Raisins
10g citric acid
5g Pectin destroying enzyme
5g Tannin (Strong cup of black tea)
4.5 L water (adjust if using grape juice)
