Usually the drain hole dumps the water into a tray that's mounted on top of the compressor.
When tb compressor runs, it gets warm & evaporates what's dripped into the tray.

If you completely block the drain hole, you will probably have problems with water puddles in the bottom of the fridge if/when you run it really cold (eg lagering)
 
Ok. It seems drilling is the only way. I'm scared but I've looked at Anna's post and it looks easy enough. Mine is a fridge freezer though with the fridge being on the top. Hopefully there's nothing I can damage on the sides by doing it.
