A lovely friend of mine has offered me as many cookers as I can Pick, Im not sure what I can do with them though, any help would be appreciated, Cider, Apple wine have no idea if they are suitable, Im not sure what strain they are but she said they are starting to turn RED, didnt know cookers even went red myself lol.

I'm pretty sure that you can although I wouldn't use all cooking apples - mix with some sweet ones - up to 50/50 if you can.

You'll need to check the acidity level (specialist kits/papers are available) of the must and add tannin as required, and you'll need to keep a check on the gravity and add sugar too. I'm pretty sure a friend of mine used all cookers in one batch, but he used a shed load of palm sugar in it too. I've just looked at his recipe and he doesn't mention the type of apples but he does say to bring the sugar up to 15%.
