You can use spray malt if you've got it. Problem with spray malt it that it doesn't keep for long once you open it as it absorbs moisture from the air and will eventually turn into a solid lump. Brewing sugar doesn't do this hence it's what I normally use for priming.
 
The reason they suggest spray malt is to add some unfermentable sugars to the beer at the priming stage.So the beer is a tad sweeter and maybe even a bit more malty.


If you use equal amounts of brewing sugar aka Dextrose you will end up with a higher carbonation, due to it being so fermentable.

Just as an example, 25.4g of dried malt extract or spray malt will give you the same level of carbonation as roughly 19 grams of Dextrose.

Dry hopped on Sunday and it suggests fermentation should be complete within 4-6 days.
There's still a thick dark brown sludgy looking krausen on top, will this dissipate like my youngs IPA did or just filter through it
