Fermentation Chamber - How to finish it?

Hi there,

I got carried away over the last week or so building a fermentation chamber from some insulation sheets. As you can see below it is accidentally on purpose a little bit large! Two at a time I suppose was my aim. And tall things as it's a bit over 800mm high.

My challenge now is the best way to make the 'door' or removable section. The most obvious way is just cut a sheet that fits and wedge it/place it. But that seems like it will fit not very well. The other option is build out the left side with some ply/wood and make a hinged piece with associated lips and latches to aid a tighter fit. Otherwise I'm unsure how to finally finish this thing!

Any suggestions gratefully received! :)

For those interested, the STC1000 was fun to make, I've got a couple of sockets wired to it now, and a small tube heater in the little fridge. The iPad is pending the arrival of one of those iSpindel things!
