Four berry medley & black cherry

recipe makes 2 gallon



ingredients.


1kg of sultanas.

1kg of frozen four berry medley.

1kg of frozen black cherries.

2kg of sugar.

1tsp of ritchies wine yeast compound.

Water.



Method: wash the sultanas with boiling water then add to a pan with water then bring to a boil then simmer for 20 min then use a stick blender to chop the sultanas up then add to the fermenting vessel and add the frozen fruit then make some sugar syrup with all the sugar then add to the fermenting vessel stir then cover and leave to cool when cool add the wine yeast compound and cover then stir two times every day for 7 to 10 days then strain and press the fruit pulp using a fine muslin bag then add some cold tap water to the fruit pulp to wash out all the fruit sugar from the fruit pulp then put the fruit liquid in the DJs then top up to the neck with tap water if you need to fit the airlocks then leave in a warm place to fully ferment out when fermenting as fully stopped rack add wine finings rack again when clear then leave to mature for 12 months.
