Hi I'm new to brewing and would like to try making some light alcohol ginger beer. I've read several threads on-line and there is a lot of variation between recipes.

Firstly, are Demijohns absolutely necessary? or can everything be done in a fermenting bucket?
What are the pros and cons of each?..

Is a 'Ginger beer plant' necessary for making ginger beer(?), and what is the plant for? Everywhere I've read a ginger beer plant is mentioned. Can I do without/ what is it for?

Which yeast is best for the ginger beer (Champagne v Cider(?), etc)?...
> How many sachets are needed??. Will one sachet be enough for 20l?

How can I control how sweet/ dry the cider is?..
